Happy Pancake Day: Beer Bacon Pancakes

There's nothing better than a stack of fluffy pancakes...oh wait there is...fluffy pancakes made with beer and bacon! Here's a recipe that is sure to make brunch a little more exciting!
INGREDIENTS: DIRECTIONS: Bacon - Prepare bacon in oven at 350 degree for 20 minutes or until crisp. Place bacon on a cookie sheet (using a wire rack is recommended) sprinkle the bacon with brown sugar, half way through, flip the bacon and sprinkle the remaining brown sugar on the bacon. Remove from the oven and cool. Once cool, crumble and set aside. Batter - Beat together pancake mix, beer and eggs until smooth. If the batter is too thick add more beer! Heat the griddle to medium-high heat and grease with butter or shortening. Pour 1/2 of batter on the griddle and sprinkle bacon on top while batter is still raw. Cook the first side until edges are raw and then flip pancakes. Cook until golden brown.
Warm maple syrup and pour desired amount on the pancakes! Cheers!
